What is the simple dish (es) do I go from a big pumpkin?

My neighbor gave me a pumpkin back to provide eggplant Parmesan (easy on the Parmesan). I am clueless as to what to do with it. I do not even know what kind of squash it is – it is yellow and green. He said it will continue to get more mature as time passes. I know this is not a zucchini because it is much more important. However, this that simple dishes can I do with him? I prefer the recipe (s) to be vegan and be level for beginners.

For those of you who do not live in either California, Florida, Louisiana or Latin America, you may not be familiar with merliton. Maybe names, chayote, vegetable pear, mango squash, Cho-cho, xuxu christophine or ringing a bell. They all refer to this versatile gourd as a vegetable which is grown around the world and called by different names. Historically, there has been a staple food of the Aztecs and Mayans.

What Merliton exactly that?

A merilton is an edible plant of the Curcurbitaceae (gourd) family as well as melons, cucumbers and squash. It is grown on a vine. It looks like a pear off light green color of Granny Smith apples. The interior is a lighter color with a large soft seed.

A merliton can be set as many ways as a sweet potato. It can be stuffed, fried, baked, mashed, creamed, Marinated and buttered. The filling is a cream pie big. It can be eaten raw and served cold in salads. It makes a delicious soup to taste merliton and donuts are a popular substitute for pancakes.

Many say that merlitons may be substituted for any recipe requiring squash. But I would add to any recipe calling for sweet potatoes as well.

Merlitons is a vegetable low in calories, only 40 calories per cup. They are low in sodium and a good source of fiber. They are rich in amino acids and vitamin C.

How Does A Taste Merliton?

It tastes good! A merliton similar to summer squash tastes, but a little sweetness. The texture on the outside is a cross between an apple land and a cucumber. The interior is more like an eggplant. I prefer to cook, but many fast food to nibble something.

Where Do I Buy One and Why Are Merlitons so great?

Although merlitons are from Mexico and Central America, they are now grown worldwide. They can be found in ethnic markets, including Asian, Indian, Philippi, Caribbean and Latin America. They may be found in your local "Super" supermarket, but most are not likely called merliton.

Merlitons are great because they taste so good and can be fixed so many different ways. But best of all men most have never heard of them. I live in Texas, and for me they are my secret weapons. When I want to WOW my friends with my cooking prowess, I cook a dish with merlitons. My merliton and Cajun shrimp soup my neighbors want more!
