Does anyone know how to make a very authentic Spanish rice?
I love Mexican food and always just buy these rice Yucky Lipton Spanish mixes. I wondered if perhaps some recipes boil the rice in tomato juice? I do not know. Revenue would be great! Thank you!
SPANISH RICE 1/4-1/2 cup vegetable oil 1-2 cups long grain rice 1/4-1/2 c. Tea salt 1-2 tomatoes, diced 1/2-1 small onion, diced 3-6 cloves garlic, minced 1-2 teaspoons cumin 2-4 tablespoons tomato paste 2-4 cup water, boiled in a medium saucepan, medium heat, fry rice in oil until lightly browned, about 3-5 minutes. Add salt, cumin, onion and garlic and sauté 1 minute. Add tomatoes, tomato paste and boiling water. This should boil almost immediately reduce heat to low, cover and cook for about 20 minutes or until water evaporates. Serve.

If you are looking for a different way to prepare salmon, salmon roasted give this a try barbecue. This recipe is suitable for diabetics and others. Surprise your family and friends with this different recipe. Serve with rice, parsley is also suitable for diabetics because it has a high content protein-carbohydrate ratio. Both dishes require cooking but you can cook the rice first, then roast salmon while the rice dish served for a few minutes. Complete your meal with your favorite salad and a light dessert.
BBQ Roasted Salmon
Cup 1 / 8 cup water + 1 / 8 pineapple juice unsweetened
2 v. tablespoon lemon juice
4 salmon fillets (6 oz each)
1 tsp tablespoons Splenda brown sugar blend
4 c. Tea chili powder
2 v. Tea grated lemon zest
3 / 4 c. Tea cumin
1 / 2 teaspoon salt
1 / 4 c. Cinnamon Tea
cooking spray vegetables
thin lemon slices, optional
Combine the water mixture of pineapple, lemon juice, and salmon fillets in a plastic zip-bag with stopper, seal and marinate in refrigerator 1 hour, turning occasionally.
Preheat oven to 400 degrees. Remove fillets bag and discard marinade. In a bowl, combine Splenda, chili powder, lemon zest, cumin, salt and cinnamon. Rub mixture over fish. Place the fish in a 11 x 7 inch baking dish coated with cooking spray. Bake at 400 degrees for 12 minutes or until fish flakes easily when tested with a fork. Serve with lemon wedges for garnish, if desired.
Note: I adapted this recipe from what I found in an old Cooking Light magazine.
PARSLEY RICE
2 cups hot rice that was cooked without salt or butter added
2 green onions chopped
1 clove garlic, minced
3 c. tablespoon of salt butter fresh
2 cups nonfat milk
8 oz pkg shredded cheese low fat of your choice (I like Mexican mix)
1 cup fresh parsley chopped
1 / 4 cup egg substitute
1 / 4 c. Tea Salt
1 / 8 c. Tea fresh ground black pepper, Optional
Preheat oven to 350 degrees. Spray 1/2-qt 1 non-stick pan with cooking spray and set aside.
Saute onions and garlic in butter until tender. Mix rice, sauteed vegetables, milk, cheese, parsley, substitute egg, salt and pepper, if desired. Stir until well blended. Spoon into prepared dish and bake for 45 minutes.
Note: You can make this recipe healthier by using brown rice. Listed above this recipe has a ratio of 10 g protein 13 g of carbohydrate per 1 / 2 cup.
