The pork ribs in Memphis is one of the most popular styles of water at the mouth of the preparation of the ribs. One reason for the popularity with the Memphis style rib is its unique blend of barbeque tradition and flavorful seasonings.

The sauce applied only to Memphis style ribs is used to mop up the sauce to baste during cooking. BBQ sauce is never used for the cooking process, but rather served on the side with ribs at the table. Because a barbeque sauce is not used, the mop sauce is an important element to maintain moisture meat. Memphis Style Barbecue Sauce is a tomato-based sauce that vinegar may also contain mustard. With this style, the meat quality is much more important that any sauce. The idea is to present the meat rather than covering it with a sauce. While some people may not expected to dip the blades in their favorite barbecue sauce, others enjoy the pure taste of just meat and seasoning rub.

Memphis-style ribs are traditionally smoked and grilled, baked or broiled. White oak and hickory are the traditional wood used, however, Many other woods are now used. Other species used are apple and cherry.

While the quality of the meat is extra important Memphis style, choosing which is cut to the individual and the occasion. The most popular rib pork is the style of St. Louis Rib which comes from the pig rib section. The back rib, also known as Baby Back Rib from the lumbar or back and is also very popular. St. Louis Style Rib is typically easier to work with and has more meat making it a favorite for eating Hardy.

However you decide to cook over low heat and slow cooking will give you the best ribs.

For the mop sauce
 · 1 1 / 2 cup cider vinegar
 · 2 cups cider Apple
 · 2 bay leaves
 · 4 cloves garlic, finely chopped
 · 3 tablespoons hot sauce
 · 1 tablespoon salt
 · 3 / 4 cup BBQ Rub, recipe follows

For the rub
 · 1 / 4 cup paprika
 · 1 / 4 cup dark brown sugar
 · 2 tablespoons black pepper
 · 1 tablespoon tablespoon salt
 · 1 tablespoon celery salt
 · 2 teaspoons garlic powder
 · 2 tablespoons tea dry mustard
 · 2 teaspoons cumin
 · 1 teaspoon cayenne pepper

Prepare ribs – Wash the ribs and pat dry with paper towel. Place ribs meat side up. Cut the fat line on the basis of the ribs to remove the cartilaginous rib tips. Turn the meat and cut the flap of meat on the inside of the ribs. It is not essential but help prevent burning. Remove the membrane on the back of each rack of ribs. You can use your fingers to remove it but sometimes it is easier to use paper towels or a cloth for a secure grip.

Combine the rub ingredients and mix well. Liberally rub the ribs both sides with mixture. Wrap each rib in plastic wrap, then aluminum foil and let marinate for at least 4 hours, but during overnight is best.

Preparing the smoker – Soak your wood chips in water for about an hour. Place a drip pan to center of your smoker with plenty of water. A charcoal chimney is best to get your coals started. Once you have coals ardent, distribute and put a healthy amount of your chips down.

Smoking the ribs - Place aluminum foil on the grill before placing the ribs down and another loose piece on top of ribs. Place the ribs on the smoker over the drip pan and cover the smoker. Start basting with sauce MOP after 30 minutes, basting every 20-30 minutes. You'll need to replenish the coals and wood chips form time to another as needed. Ribs are cooked when the meat is very tender and has shrunk the ends of bones. At temperatures ranging from 200-250 your ribs should take about 4-5 hours however every smoker is different.

Cut each slab between the rib bones and serve with your favorite barbecue sauce on the side.

Does anyone have a recipe for Tator tot casserole? With meat hamburger, onion, cheddar cheese, etc.?

You just empty all this in a baking dish with a can of cream of mushroom soup and a can of milk. There are a ton of revenue. I made this once and hated it. Brown 1 lb. of beef with onions in salt and pepper. Drain fat. In a baking dish top with about 1 / 2 bag of tater tots. Mix milk and soup together and pour over tater tots. Bake at 350 about 35 minutes, top with cheese and bake about 10 minutes longer until cheese is Melty.
