I do not want to make homemade pumpkin. I cans Libby of it. and I made pumpkin pie last time. I want to do something different. more like pumpkin cookies. Sounds good. I forgot to mention. I do not like any nuts in cookies lol

Iced Pumpkin Cookies 1 cup unsalted butter 1 cup sugar 1 cup cooked, mashed pumpkin (fresh or canned) 1 egg 1 teaspoon pure vanilla extract 2 cups unbleached flour 1 teaspoon baking powder allpurpose 1 / 2 teaspoon salt baking soda 1 / 2 1 1 / 2 teaspoon teaspoon freshly grated nutmeg 1 cup cinnamon coarsely chopped 1 cup raisins Icing: 2 cups sifted confectioners butter cup sugar 1 / 4, 1 teaspoon vanilla 3 tablespoons softened tablespoons whipping cream, fresh orange juice or rum Preheat oven to 350 degrees. Beat butter and sugar until fluffy. Add pumpkin, eggs and vanilla and mix well. Combine flour, baking powder, baking soda, salt, cinnamon and nutmeg. Embed to butter mixture until well blended. Add nuts and raisins. Spend teaspoon of baking parchment covered, about 2 inches apart. Bake for about 15 minutes, or until golden. Cool. Icing: Cream confectioners' sugar and butter. Add remaining ingredients and beat until smooth. (If the icing is too thin, add more powdered sugar;. If it is too thick, add cream, orange juice or rum) Pour over cookies.
