The tomato is a fruit and part of the Solanaceae family (like potatoes and eggplant), but they are prepared and served as a vegetable, this which explains why most people consider them a vegetable and not a fruit. Tomatoes come in a variety of colors, shapes and sizes: big red steaks are slightly irregular globes are red, medium sized and round, plum tomatoes are egg-shaped and red or yellow (grape tomatoes are plum baby); cherry tomatoes are small and round, etc. There are many heritage varieties which are not widely marketed, but come in red, yellow, green and even purple, as well as scratches.

Raw vegetables are dangerous and must be thoroughly fried, steamed and boiled until submission. So thought our ancestors. The original sin of a recalcitrant vegetable was of course mitigated heat, but the nineteenth century, conscientious Cook continues to boil it long after they fell into a gelatinous mass, just in case some evil remained.

In the nineteenth century cooking an hour barely sufficed for cabbage and corn on the cob. They did not fix broccoli at all, and I can understand why. I tried to imagine broccoli after an hour of cooking, but the rarest minds back and refuses even to approach to horror.

Which reminds me of an event of summer 1956, when my classmate Patsy Sutherland and I lived with Grandpa Hess while we were going to business school in Missoula, Montana. Grandpa was a widower aged, crusty, set in its own way of maintenance, but he tried to forgive. In midsummer he bought a box full of tomatoes. Luscious, red tomatoes blackberries. They sat in the way cave for two days, and every time Patsy and I spent our mouths watered. Each evening, we thought that invite us to have a tomato or two, but he did not. When we arrived home on the third evening, he said, "Girls! I set tomatoes today. Help yourself! "

He had stewed every last one of them.

Some of these recipes old tomato are good, though. The originator of Tomatoes Maryland probably had an old wood stove that could gently simmer something all afternoon on a back burner or the oven. Which means that it was probably a fall or winter dish rather than a summer one, as we let the fire stove out in the summer afternoon.

TOMATOES MARYLAND

Break into pieces 2 slices of stale bread. Add 4 cups canned tomatoes or fresh, peeled and cut into quarters, half an onion, chopped, and about 2 / 3 cup brown sugar. Salt lightly.

Bring mixture to a boil and simmer gently for 3 hours, stirring occasionally.

My notes say: "It takes three hours to cook, even with the lid of the pot Most of the time. Perhaps some of the tomato juice fine could be paid off early, shortening the cooking time. "

Tomatoes Maryland is the kind of sweet dish American cooks like to serve with chicken or pork. I almost said "cooks from regions other than the Northeast." Then I remembered the apple sauce with pork, cranberry sauce with turkey, mint jelly with lamb and beans cooked with salt pork. Not to mention pancakes and syrup with sausages cuddled closely. And the meat pie, the ultimate mixture of meat and sweet. (And, yes, minced real, as opposed a packaged mix, does contain meat.)

I would add that some people grandpa generation has to eat tomatoes diced raw garden for breakfast, just as one would eat strawberries with sugar and cream. You see, it is safe to eat raw with sugar and cream, because the tomatoes then ceased to be a vegetable and has become a fruit.

And actually those old-time breakfasts have been right. Fresh vine-ripened tomatoes are good with sugar and cream. Let's face it, most things are good with sugar and cream. And of course tomatoes are really a fruit.

Pork Chop Hill was based on the eyewitness essays of ex-soldier S. L. A. Marshall. The film is set during the Korean “police action.” While diplomats argue pointlessly over the shape of the negotiation tables at Panmunjon, United Nations troops bleed and die. Lieutenant Gregory Peck leads a 135-man unit on the attack of the Chinese-held Pork Chop Hill. When reinforcements finally arrive, only 25 of Peck’s men survive (and they aren’t the usual survivors we’ve come to expect from earlier, clich?-ridden war films). Among the American troops are such dependable performers as Harry Guardino, Woody Strode, Rip Torn, Barry Atwater, George Peppard, Robert Blake and Martin Landau. Former cowboy-star Bob Steele also shows up briefly as an American general. According to director Lewis Milestone, Pork Chop Hill was cut by nearly twenty minutes because the wife of star Gregory Peck felt that her husband made his first entrance too late into the picture. True or not, the film does show signs of post-production tampering, with flashes of several excised scenes showing up under the main title credits. ~ Hal Erickson, Rovi
