At Easter, the sauce I'm sure many people will look forward to their traditional lunch on Easter Sunday lamb roast with all the trimmings – Including mint. Contrary to what you might think, however, mint sauce was not invented by the English, but it is certainly in Roman times, if not sooner. In the writings Apicius, we can find recipes for mint sauce with cumin seeds and pine nuts to serve with roast pork with pepper, almonds, oregano and honey, fish sauce cold and pepper, lovage, red wine and vinegar to eat with lamb.
However, in the ancient world, the mint has been appreciated as much for its medicinal qualities as to its properties as a culinary herb. Her delicious smell was regarded as a stimulant to both the mind and appetite while Pliny suggested that students should plaiting a crown of mint to wear around their heads to stimulate their brains. This may not be as crazy as it sounds, since aromatherapists claim that essential oils of some plants, including peppermint, can improve memory and concentration.
The Roman legions have cuttings of their favorite plants with them as they conquered Europe, and mint is one of the herbs most useful to introduce in Britain over 2,000 years. By the Middle Ages Mint is already a favorite, found in every kitchen gardens, used as well in cooking and medicine. It is difficult to be certain what species of mint Romans introduced to these islands, there is a surprising variety of species. Most botanists now agree, however, it was likely to be horsemint, hence our Spearmint modern developed. Other species popular today is peppermint, which has a distinctive purple stem, although is easy to buy a wide range of plants, including pineapple, apple, cologne, ginger and bergamot mint!
Spearmint is milder both cash and in Spain, is known as "Djerba" buena – good grass, and is used to treat a number of childhood diseases, including dentition, wind colic, and fevers. Mint has always been used to treat a range of diseases, although I am not sure how successful it would have been in the fight against pain caused by the bite of a rabid dog, or in easing the pain of childbirth as a Culpepper recommended?!
Culpepper also recommends mint as "useful in all diseases of the stomach" and modern herbalists agree with him, using it to treat morning sickness in previous pregnancies and recommending an infusion of peppermint and ginger Travel to treat disease. Children with stomach aches may also be appeased by this tea.
The slight stimulatory effect of peppermint known physicians of ancient Greece and Rome used it as a tonic for nerves sweet – a use that was still in England in the 17th century …. "Mint is sometimes used lip balm and other herbs as an aid to comfort and strengthen the nerves." Applied locally, oil Peppermint may have a mild analgesic effect, producing a first sensation of cold, numbness and mild.
Another recommendation Culpepper was gargling infusion of mint in the mouth "heal the mouth and gums are sore." Scurvy, a vitamin C deficiency is a common problem Spring in the days after the long winter months when fresh fruits and vegetables were rare. In fact, the freshly picked mint has averaged about as much vitamin C as the same weight, oranges and more carotene than carrots, which makes it an excellent nutritional value. To take full advantage of these properties, try adding finely chopped mint to the salad – refreshing and good for you.
If you feel as if you may be succumbing to a cold, then a classic appeal that is equal parts country of elderflower, yarrow and peppermint infused in boiling water, strained; sweetened with honey and drink something hot last night. Hopefully you'll be seeing better in the morning! The mint is also an excellent insect repellent, a large bouquet suspended the rear door is excellent and eco-friendly fly discouraging.
If after reading this you're anxious to make mint in your garden if you have not already done so, then remember – all the mints are very vigorous growers and if you do not want to take over the whole plot, planting in a bottomless bucket sunk in the ground. They are perennials and come back every year.
Finally – time to hot – do not forget the champagne julep. Fill your glass, add a bit of sugar and two sprigs of mint. We need now, it's been perfect!

Recipe for slow cooker pork tenderloin & apples?
Well, I really think that you should use something like pork shank or pork butt in a slow cooker instead of pork tenderloin. The reason for this is that both butt and shank have not only more flavor but also more connective tissue. This tissue, that normally makes it tough and chewy will break down during slow and low cooking making the finished product fork tender.
What you will need:
Some pork
1 large onion
1-2 carrots
1 bay leaf
kosher salt
black pepper
honey?
brown sugar?
a few cups(?) of water
First, take whatever protein item you have decided on. Generously season it up with some kosher salt and fresh ground black pepper. Get a saute pan, put enough oil in it to barely coat the bottom of the pan, get it so hot the oil almost starts to smoke, and sear that lovely piece of pork that you have. Searing means to get a nice golden brown color on all the sides without burning it or actually cooking too much of it. You want a nice color that makes you feel happy about what you have just done.
Once its nice and pretty on all sides take it out and turn the heat down a little. Take some liquid and deglaze your pan. Deglaze means to get all those nice little brown specks on the bottom of your pan up. Throw in a little bit of water, some light beer or maybe some red wine and work a wooden spoon in the bottom of your pan, scraping up all the little brown bits that are full of wonderful flavor. When you are finished, dump them into your crock pot.
Now you can throw some onions and carrots in the bottom of your crock pot. Cut them up a little but not too small. Throw in your pork, maybe a dash or two of honey, maybe some brown sugar, and maybe a little bit of flour, a bay leaf or two, and call it a day.
You should throw in a little water, just enough to barely coat the pork halfway to two-thirds. Set your crock pot and walk away.
As for the apples? Honestly, I would probaly cook them in a seperate pan with some butter and brown sugar but I understand if you are looking for a simple, one pot kind of meal. You can cut the apples at the same time as your carrots and onions and just put them in a little water with lemon juice to keep them from browning. Throw them in for the last twenty mintues or so that your pork is finishing. You shouldn’t be dissapointed.
