Green Pepper Casserole?

I do not really stuffed green peppers (the remains are unattractive, it's just me, then there will be leftovers), but a casserole dish on the same principle sounds soo good! I want to use ground beef, red and green peppers, stewed tomatoes, perhaps the maize, rice and onion permanently, then top with cheese, but really do not know how to put together to make it taste as good as I think it could. I searched the web for recipes, but you'd think I was out of my hat. I can not find anything! Ideas how to do this, anyone?
