(1) Sweet Potato Surprise
- 3 medium sweet potatoes
- ½ cup firmly packed brown sugar
- ¼ cup raisins
- ¼ cup marshmallows
- 1 cup orange juice
- 3 c. soup. walnuts, chopped
- 2 c. soup. butter, melted
- ¼ c. Tea Salt
- 1 tsp soup. cornstarch
Preheat oven to 350. Boil the sweet potatoes. Run the cold water over the potatoes and let them air dry to cool. Once cooled, you can peel. Cut the potatoes into pieces about 2 inches. In 9-inch baking potatoes arrange to your liking. Combine raisins, corn starch, and orange juice. Cook over medium heat. Stir constantly. Add salt and butter in the pan. Mixture will become thick and that is when it is done. Pour on potatoes. Sprinkle with marshmallows and chopped nuts. Bake for 20 minutes. Yields 6-8 servings.
(2) Pumpkin Bread
- 2 eggs
- 1 / 3 cup water
- 1-8 oz can pumpkin
- A 1 ¼ cup flour
- 1 / 3 cup shortening
- 1 1 / 3 cup sugar
- 1 tsp Tea. baking soda
- ½ tsp. cinnamon
- 1 / 3 c. Tea. salt
- 1 / 3 c. Tea. baking powder
- 2 / 3 cup raisins (optional)
- 2 / 3 cup nuts (optional)
Preheat oven to 350. Whisk together sugar and shortening. Add pumpkin, eggs and water. Blend until smooth. Add flour and sugar. Stir in raisins and nuts, if desired. Add baking soda, salt, cinnamon and baking powder. Grease 9-inch pan. Cook oven for 1 hour. A toothpick inserted comes out clean when done. Cool. Serve with melted butter and sprinkle with sugar.
3) Green bean pan
- 2 cans (8 ounces each) cut green beans
- 2 cups brown rice, uncooked
- 1 sm. Regular pot cheese wiz
- 1 sm. jar jalapeno cheese wiz
- 1 can cream of mushroom soup
- 2 / 3 cup butter melted
- ½ cup chopped onion
- 1 clove garlic, minced
- 1 cup grated cheese favorites
Preheat oven to 350. Measure the rice with precision. Cook rice per package instructions. Drain rice completely. Let rice sec. Add the green beans. Combine soup and butter together until creamy. Combine the two mixtures together. Add both jars of cheese. Add cheese gradually stirring as you go. Add garlic and onions. Prior to oiled baking pan, a pot of shredded cheese of your choice. I prefer mozzarella. Bake 50 minutes or until cheese is bubbling and has started to brown on
Pasta Salad
Cook pasta until done, drain. Chill in refrigerator for at least an hour. Run the pasta in cold water before starting to prepare. Add vegetables to pasta. Mix in a cup Italian dressing. Sprinkle with Parmesan if desired. Serve with whole wheat crackers.
(5) Orange Cranberry
- 7 slices of bread
- ¼ cup butter
- 2 medium oranges
- ½ c. Tea. poultry seasoning
- Â ½ cup cranberry sauce, canned
- 1 cup chopped celery
- 1 cup red onion
- 1 cup chicken broth
Take slices of bread. Cut into half-inch cubes. Set aside. Cook celery, onion red and butter over medium heat. Cook until celery and onions are tender. Add to orange mixture. Cook over low heat for ten minutes. Add cranberry sauce. Cook over low heat for 10 minutes. Combine the seasoning of the chicken and chicken broth. Add the celery mixture. Cook until the broth is well dissolved. Remove from heat, pour the entire mixture over bread mixture immediately. Mix well and serve with sauce Cranberry extra on the side. Garnish with orange and basil.

Here is a Bean Lasagna Makes: 5 servings Ingredients: 4 cans diced tomatoes 1 12 Oz Bottle Taco Sauce 2 cups corn 15 Lasagna Noodles 1 / 2 cup black olives 1 1 / 2 cup cottage cheese 2 cans refried beans Preparation: 1. Add 5 oz at taco sauce in bottom of a lasagna pan. Distributed in the background. 2. Cover sauce with a layer of noodles. 3. Add beans, cheese, corn, diced tomatoes, the remaining noodles and the remaining sauce in the order you want, but put enough beans for a final layer. 4. Place a layer of noodles in the alternating layers. 5. Finish with a layer of beans and sauce to tacos. 6. Cover with aluminum foil and bake at 375 degrees until the lasagna is cooked.
