I need a Mexican dish easy to do for a baby shower?
* There can be enchiladas or tamales I'm going to a baby shower 115 miles from my home, I was invited to bring a dish with a Mexican theme, I'm kind of at a loss for Last time I went to a baby shower theme Mexican tamales I brought home (NEVER!) from another person is enchiladas, and a another person brings the beans, I do not really know what to do since I'm traveling so far and any ideas? (Links and recipes please!) I have to make a fuss, just chips and salsa I do loooove Posol mmm! I'll try this recipe, but not for the babyshower (I like pigs feet in the mine instead of pork loin, but still sounds yum!)
you should make arroz con leche (just keep in an ice chest) * / 2 cup raisins 1 * 1 / 3 cup rum or pisco (a baby shower for Pepsi use or rum extract) 1 / 2 cup rice 1 cup water * 1 1 / 2 cups whole milk * * 1 / 2 teaspoon salt * * cinnamon stick 4 cloves 1 can evaporated * * 2 / 3 cup milk sugar * 1 teaspoon * vanilla cinnamon Preparation: 1. Soak the raisins overnight in rum. 2. Add rice, water, milk, cinnamon, cloves and salt in a saucepan and bring boil. Cover and simmer, stirring occasionally, until rice is cooked. 3. Remove the cinnamon stick and cloves. Add the condensed milk and sugar, and continue to cook on low boil, stirring constantly, until mixture thickens (about 20-30 minutes). Drain raisins and add to rice mixture. Cook a few minutes. 4. Remove from heat and let cool for five minutes. Stir in vanilla. 5. Serve cold or at room temperature, dusted with cinnamon.
