Recipes

$22.01

2006 IACP Award Winner: General Category! Preface by Martha Stewart. Recipes. Cooking all comes down to the recipes — those ingredient-by-ingredient, technique-by-technique, step-by-step instructions. In Recipes, Susan Spungen, founding food editor and editorial director for food at Martha Stewart Living Omnimedia for twelve years, presents her own easy, unfettered ideas for cooking simple food rich with freshness and flavors to share with family and friends. Recipes is organized by technique, explaining why sautéing is great for two or four but when feeding a crowd braising is the better choice. Prepare focuses on the basics, from making a vinaigrette to roasting garlic and peppers. Chop includes not just salads, but gazpacho and a Provençal sandwich that requires knife skills. Sauté explains how to pan-sear fish and make a layered omelet. Grill shows proper techniques for cooking scallops, asparagus, and steak over an open fire. Roast offers the perfect roast chicken and a roasted squash salad. Bake features a variety of pizzas as well as mushrooms baked in parchment paper. Simmer and Braise coaxes the most flavors from soups and lamb shanks. Finally, there’s Indulge, a selection of desserts from simple brownies and peach melba to a fruit crisp and a rich chocolate cake. Susan believes that one of the most pleasurable parts of a meal should be the making of it. Recipes encourages home cooks to become confident cooks.

Recipes For Our Daughters

$13.96

This special cookbook is more than a collection of recipes; it’s an act of love. When Naomi Neft’s and Cynthia Rothstein’s daughters graduated from college and moved out on their own, the mothers found themselves besieged by frantic phone calls asking for cooking advice: What’s the recipe for their mothers’ famous roast chicken? How long do eggs last in the fridge? What should they do if they oversalted something? What’s a quick and easy dish to impress a date? Called to action, Naomi and Cynthia decided to gather all their families’ recipes into one book. Then they asked other women—women who would make strong role models for their daughters—to share their favorite recipes. The result is this joyous book. Recipes for Our Daughters includes more than 200 delicious dishes, conveniently divided by subject, from Appetizers to Desserts. Inside you’ll discover such mouthwatering fare as Beverly Sills’s Dutch Babies, which will make your kitchen smell like fresh-baked heaven; Donna Shalala’s healthy and irresistible Tabouleh; Nicole Miller’s scrumptious Summer Rolls; Peggy Fleming’s moist and mouthwatering Salmon in Parchment Paper; Olympia Snowe’s delicate Baklava; Marlo Thomas’s sinful Chocolate Soufflé; plus the authors’ own contributions, including that famous Roast Chicken and Gravy, Low-Fat Kugel, six variations on the legendary Tuna Salad, Quick and Tasty Meatloaf, Guilt-Free French Fries, and very guilty Hazelnut Meringue Cake. Featuring practical cooking wisdom essential for the burgeoning chef— buying and storage tips, troubleshooting if a dish is too salty or spicy, and what to substitute when you’re missing an ingredient—Recipes for Our Daughters is the perfect gift for mothers, aunts, and grandmothers to pass along to the ones they love. There’s even space at the back of each chapter so you can personalize the book with your own favorite recipe!

Food Network Meatloaf recipe = HELP!!!!!!!?

Ok – someone else asked this question about 7 months ago – but no one was able to help. I hope this time, someone has the answer. August/September 2006 food network had an episode of “Secret Life of… Comfort Foods” A guy had a recipe for meatloaf that included oatmeal instead of breadcrumbs and called for covering the meatloaf with raw bacon before putting it in the oven to keep it extra moist. Darn food network never posted the recipe for it though!!!!! Does someone know the recipe – or have you seen the show recently and remember what else you put in this meatloaf? Also – what restaurant was that meatloaf from. Thanks guys!

All these other recipes for meatloaf look wonderful.

However, I believe the reason food network.com doesn’t have the recipe listed is because they have a link to the comfort diner’s website – and the meatloaf recipe is there. And now it’s here:

The Comfort Diner’s Meatloaf
Five years before opening his first Comfort Diner, Ira Freehof tasted the most incredible meatloaf he had ever experienced. Though he steadfastly refuses to identify the source, he persuaded the person who cooked it for him to share the recipe, then tucked it away and patiently waited to unleash it on the New York City dining population. When he did, in 1996, it met with peerless praise, such as that from Gourmet magazine’s David Rosengarten, who called it “devastatingly delicious.” Among its tricks are the inclusion of pork and the use of oatmeal instead of bread crumbs to retain as much moisture as possible.
Servings: 6
•1 pound ground beef 80% lean
•8 ounces ground veal
•8 ounces ground pork (Note: A “meatloaf variety” pack of beef pork and veal may be used.)
•2 large eggs, at room temperature
•1 cup milk
•1 cup oatmeal
•1/2 cup canned peeled tomatoes, drained and roughly chopped
•1/3 cup finely diced celery
•1/2 cup finely diced onion
•1 clove garlic, minced
•1 tablespoon dried basil
•1 tablespoon dried thyme
•1 tablespoon dried oregano
•1 teaspoon coarse salt
•1 teaspoon freshly ground black pepper
•Mushroom Gravy (recipe follows)
1.Preheat the oven to 425 degrees F.
2.In a large bowl thoroughly combine the beef, pork, and veal. In a separate bowl, beat the eggs, and then stir in the milk and oats. Pour the egg mixture into the meat mixture and combine thoroughly. Add the remaining ingredients and combine again until fully incorporated.
3.Form into a loaf in a roasting pan and bake for 45 to 50 minutes.
4.Remove to a platter and keep warm while making the mushroom gravy. (Note: Be sure to reserve 1/2 cup drippings for the gravy.)
Mushroom Gravy
•1 1/2 cups water
•1/2 cup drippings from the meatloaf
•1/4 cup all-purpose flour
•4 large button mushrooms, thinly sliced
•Coarse salt and freshly ground black pepper to taste
1.Pour the water into the meatloaf’s roasting pan and stir and scrape with a wooden spoon or whisk to loosen the browned bits at the bottom.
2.Pour the reserved meatloaf drippings into a 2-quart saucepan and warm over medium heat. Gradually stir in the flour until smooth. Add the sliced mushrooms and cook, stirring constantly, until mixture is slightly browned, 4 to 5 minutes.
3.Slowly stir in the liquid from the roasting pan and cook, stirring, until thickened. Season with salt and pepper to taste.
