For all you busy cooks who want a home cooked meal with dessert ready in minutes, here is a simple dessert that you can do in minutes. These shortcuts Banana pancakes with hot chocolate are not only quick, they taste good too. Bananas are an excellent health food and should be included in your diet often.
1 small package (4 servings) Mix chocolate instant pudding
1 1 / 2 cups milk
6 tablespoons butter
6 tablespoons brown sugar
3 med bananas, sliced
3 large burrito flour tortillas style
6 tablespoons frozen whipped topping, thawed
In a medium bowl with a whisk, beat pudding mix into the dry milk. Beat 2 minutes to thicken and set aside.
In a large skillet, place butter and brown sugar. Cook mixture over medium heat until the butter is melted and mixture is well blended, stirring occasionally. Add banana slices and cook, stirring for several minutes until that hot. Transfer the banana mixture into a bowl and cover to keep warm.
Heat tortillas one at a time in the same pan used above. To remove heat tortilla from the pan and spoon about 1 / 2 cup of the mixture evenly pudding in center of each tortilla. Top mixture evenly with the milk mixture to the banana. Fold the two ends of the tortilla, then roll. Cut each tortilla crosswise in two make tortillas 6 "pancakes".
Place each half, seam side on a serving platter. Top each half with about 1 tablespoon tablespoon whipped topping before serving immediately.
NOTE: You can also buy ready to use if you pancakes do not like tortillas.
