I’m looking for the beef enchilada recipe that a restaurant called El Mexicanco used to serve.?
There used to be a restaurant in Huntsville, Alabama called El Mexicano. They had THE BEST ground beef enchiladas I’ve ever eaten and haven’t been able to find anything comparable in taste since they closed (many, many years ago). The beef filling didn’t have a tomato sauce but was very well seasoned with spices and there was an excellent tomato based sauce over the tortillas.
I would LOVE, LOVE to have this recipe or one close to it! Thanks!
Small world! I’ve been to an El Mexicano restaurant in Florida and was told there’s a small chain of family-owned restaurants with different names in Florida, Alabama and Louisiana. Like you, I found their beef enchiladas to be so good. I’ve searched the Internet and can’t find a comparable recipe, unfortunately. But, there’s one ingredient I could taste in their meat mixture that I don’t think many have and that’s bay leaf. So, maybe try a good ground beef enchilada recipe and use bay leaf while browning the meat. Also, what I liked about their sauce was that it wasn’t too tomato-y…very light flavor. Gosh, now I want some of their enchiladas! lol Sorry I couldn’t be of more help but I just had to respond when I read your question since I, too, love their enchiladas.
