Vegetarian & Vegan Recipes?

I'm sure this has been asked many times, so bare with me. My father and I just had vegetarian for health reasons. He has been good so far, except for the fact that we do not know how to bring variety in our diet. It is all about sautéed onions, peppers, mushrooms, tomato and false Burger (Boca Burger) plus either rice or wheat spaghetti. All right, but it definitely gets boring. I need some tasty recipes or at least some new sites! Or the name of cookbooks, and even resturaunt (especially in western New York if you came here). What is your favorite recipe vegetarian? All meat alternatives (soy, tofu)? I am is interested in an eggplant recipe parmesian too, if you know it. So help! We are new to this! And thank you in advance! =)

Do you know a recipe for eggplant lasagne but using instead of noodles?

I had an eggplant rolled or cheese ricotta and mozzarella inside, more like a manicotti, but they wanted to try a lasagna. I do not know how to do this if I am supposed to fry the eggplant first [as in eggplant parmesan] or layer it first? I saw a few recipes online, but they call to have all the meat from the eggplant or the sauce. I want to make a dish without meat, vegetarian so any suggestions are helpful, but I am grateful for all recipes. = D Thank you all! We have one of those deli slicers, so that I would use it to cut the eggplant, so their thin, all the same size. @ Chester: LOL. Yeah, I'll use parm. cheese and my husband will call you to babysit when we have to go to the hospital. = P
