Christmas Breakfast Casserole Recipe

How to prepare Christmas Breakfast Casserole recipe? It can prepare it with just a little effort. This is a simple one dish casserole so you wouldn’t have to spend all my time in the kitchen. Recipe makes 12 servings. Follow this directions.

CHRISTMAS BREAKFAST CASSEROLE  RECIPE

INGREDIENTS:

1 pound bacon slices
2 cups diced potatoes
2 cups diced ham or cooked ground sausage
2 red bell peppers, chopped
2 green bell peppers, chopped
11/2 cups chopped onions
Two 2 ounce cans sliced ripe olives, drained
1 cup sliced mushrooms
12 eggs
3 cups milk
1 cup biscuit mix
11/2 teaspoons salt
1 teaspoon black pepper
1 teaspoon garlic pepper
1/2 teaspoon dried parsley
2 cups shredded mild Cheddar
2 cups shredded mozzarella
One 16 ounce container salsa
One 16 ounce carton sour cream

DIRECTIONS:

Preheat the oven to 375°F. Grease a 13 x 9- inch glass baking dish.
Heat a large skillet over medium- high heat. Add half of the bacon and cook until crisp, stirring frequently. Drain on paper towels; discard the drippings. Repeat with the remaining bacon. Crumble and set aside.
Layer the potatoes, ham, red bell peppers, green bell peppers, onions, olives, mushrooms, and bacon in the order listed in the prepared pan.
Whisk the eggs in a medium bowl until well beaten. Add the milk, biscuit mix, salt, black pepper, garlic pepper, and parsley and stir until well blended. Pour evenly over the potato mixture; cover the casserole with foil. Line the oven rack with foil to catch any drippings.
Bake for 1 hour, uncover, and bake for 20 minutes longer, or until a knife inserted in the center comes out clean. Sprinkle the Cheddar and mozzarella evenly over the top and return to the oven for 10 to 15 minutes until the cheese melts and begins to brown.
Remove from the oven and let stand for 15 minutes. Top each serving with a dollop of salsa and sour cream.

LITTLE TIPS:  Even though the list is lengthy, most of the ingredients, such as the ham, cheese, olives, and mushrooms, may be purchased already chopped. You can even purchase cooked bacon.

Planning a party and looking for appetizer ideas? Are you or some of your guests diabetic? Below is a list of ideas are delicious appetizer for everyone and are perfect for diabetics. If you use one of these recipes, you will not have to worry about whether you or are not responding to the needs of diabetics.

For a good selection, we recommend the following appetizer menu. Of course, you will need to adjust the number of guests you expect. You may need one, then again, you may need them all.

A cheese platter assorted cubes and purple and green grapes.

Party Meatballs

Meatballs: 1 lb. ground beef
1 / cheese 2 cup Parmesan
1 / 2 cup bread crumbs
2 eggs
1 / 2 c. Tea garlic salt
1 tsp Tea chopped fresh parsley
Freshly ground black pepper to taste

Sauce: 1 / 4 cup butter
1 / sour cream 4 cups
1 / 4 CUP A-1 sauce
1 / 4 ketchup
1 tablespoon Splenda brown sugar blend

To make sauce, combine all ingredients in a small saucepan. Heat over low heat, stirring often, until that Splenda dissolves. Simmer down while you make the meatballs.

To make meatballs in a medium bowl, combine all ingredients and mix well. Form into cocktail size meatballs. Spray large nonstick skillet with cooking spray. Place meatballs in a single layer in heated skillet. Simmer over low heat until golden.

Mix the sauce with the meatballs and keep warm in a dish to wear or slow cooker.

BROCCOLI BITES

1 16-oz bag frozen broccoli pieces
1 / 2 cup Parmesan cheese grated
1 cup grated mild cheese
2 cups Pepperidge Farm stuffing
4 eggs
1 / 2 cup chopped onion
1 cup butter melted
1 / c. salt 2 tsp garlic
1 / 4 c. Tea Thyme

Thaw broccoli slightly and then break into pieces. Beat butter, eggs and stuffing with a wooden spoon. Add remaining ingredients. Form into appetizer-size balls and place on a baking sheet. Cook oven for 15-20 minutes at 350 degrees.

BACON TOMATO TARTLETS

12-oz refrigerated flaky biscuits
6 slices bacon cooked, drained and crumbled
1 medium tomato, seeded and diced
3 / 4 cup shredded mozzarella cheese
1 / 2 cup mayonnaise
1 tsp tablespoons fresh basil, chopped
3 / salt 4 c. tsp garlic
1 tsp tablespoon fresh thyme
3 / 4 c. to tea fresh oregano, chopped

Preheat oven to 350 degrees. Split each biscuit into 3 layers. Spray muffin tins lightly with cooking spray. Press biscuit rounds into the molds. Take only 24, do not use the whole box of cookies. In a medium bowl, mix remaining ingredients together. Fill each uncooked biscuit cups with mixture. Bake for 10 to 14 minutes or until lightly browned on edges.

NOTE: Can be made ahead and frozen for later use. Bake, remove from pan, cool completely and freeze. Heat from frozen for 10-14 minutes at 350 degrees on a cookie sheet cookie.

GROUP OF BALLS CHEESE

1 package (8 oz) cream cheese, fat free, softened
4 oz pkg low fat shredded cheddar cheese
1 tsp tablespoons Worcestershire sauce
1 package of pressed beef, cut into small pieces
1 / 2 small sweet onion, finely chopped
1 cup chopped pecans finely

Soften cream cheese at room temperature. Combine cheddar cheese softened cream and use hands well. When mixed add Worcestershire sauce and chopped onion, stir in cheese mixture. Form a ball and cover with beef and pecans. Refrigerate before serving. Serve with party crackers.

A tray of celery sticks with two different stuffings. On a plate or a plate of celery sticks Substitute stuffed with peanut butter and chili cheese.

Now you have a bunch of appetizers to please anyone, and plenty of options for treating diabetes.
