can i remove or replace eggs in this recipe?

2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter 3/4 cup brown sugar
2 eggs, beaten
2 1/3 cups mashed overripe bananas
(I put bananas that are ‘turning’ into the freezer until I’m ready to bake with them.)

Directions
1 Preheat oven to 350 degrees F Lightly grease a 9×5 inch loaf pan.

2 In a large bowl, combine flour, baking soda and salt.
In a separate bowl, cream together butter and brown sugar.
Stir in eggs and mashed bananas until well blended.
Stir banana mixture into flour mixture; stir just to moisten.
Pour batter into prepared loaf pan.

3 Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

Here are some egg substitutes:

2 tbsp corn starch = 1 egg
2 tbsp arrowroot flour = 1 egg
2 tbsp potato starch = 1 egg
1 heaping tbsp soy powder + 2 tbsp water = 1 egg
1 tbsp soy milk powder + 1 tbsp cornstarch + 2 tbsp water = 1 egg.
1 banana = 1 egg in cakes.

did bisquick change its shortcake recipe?

my mother has made bisquick strawberry shortcake for years (my favorite!). my husband and i have tried to make it 4 or 5 times this past year. The first time it was FAR too runny (like pancake batter!) I kept upping the amount of bisquick and it has finally gotten a good consistancy but it still doesn’t taste the same (and usually burns on the bottom too). My mother has recently had problems getting good results from it too. Has anyone else had this problem? Does anyone know if they changed the recipe on the back of the box?

Don’t use the recipe on the box.

Here:

Add a third cup of sugar, two tablespoons of lemon juice, two tablespoons of melted crisco, and a half teaspoon of baking powder to the regular biscuit recipe. You’ll need to add about a third to half cup of bisquick to the recipe to get the right consistency, it shouldn’t be runny at all. Stiff, with peaks, a fork will stand up in it.

If you want drop biscuits, leave it there, spoon onto a baking sheet, and go from there. If you want regular shortcake, add enough bisquick so you can roll out the dough, and use a biscuit cutter on it. (I do it this way.) When the biscuits are formed, brush the tops lightly with eggwhite or milk and sprinkle with sugar crystals.

Voila! Bisquick shortcake.

Actually, I “discovered” a pillsbury shortcake shortcut that I like even better this summer. Buy the “Flaky Layers Grands, buttermilk recipe” Only the pillsbury tastes right. Bake according to directions, split in two and top with layers of whipped cream and strawberries.

The perfect combination of buttery and sweet. So light, they’re incredible, and there’s no prep time involved. My friends RAVED about this desert.
