looking for a low-calorie low-fat vegetable cooking / cooker recipe …?
I am looking for a recipe that has not a lot of heaviness to it, no cream or eggs. Just something I can throw together the zucchini, squash, mushrooms, Brussels sprouts, canned tomatoes, asparagus, etc. Any ideas?
SPINACH AND PASTA CASSEROLE 1 c. soup. calorie-reduced butter 2 tbsp. 1 c. all-purpose flour skimmed or skim milk 1 / 2 c. canned ready-to-use low-sodium chicken broth 1 c. Ditalini or other sm. tubular pasta, cooked as directed 1 c. spinach, stems removed, chopped, cooked, drained 1 c. part-skim ricotta cheese 3 oz Mozzarella, grated, divided 1 / 2 c. egg substitute frozen, thawed 4 tbsp. grated Parmesan or Romano cheese, divided aerosol Vegetable cooking spray 1-quart saucepan, melt butter over high heat, sprinkle with flour and stir quickly to combine. Continue mixing cook for 30 seconds. Gradually add milk and chicken broth. Reduce heat to medium high and cook, stirring constantly, until mixture slightly thickened, about 3 minutes. Add pasta and spinach and mix well. Set aside. Preheat oven to 350 degrees. In a medium bowl, combine ricotta, 2 oz Mozzarella, egg substitute and 2 tablespoons Parmesan or Romano cheese, add to spinach mixture and mix. Spray a casserole dish 1 1 / 2 to 2 qt nonstick cooking spray and add vegetables, spinach-cheese mixture to the saucepan. Sprinkle with remaining 1 oz mozzarella and remaining 2 tablespoons Parmesan or Romano and bake until cheese is melted, about 20 minutes. Remove from oven and serve. Serves 4.

What is the best way to cook asparagus quiche with asparagus for?
I found two recipes both very similar, except for two things. A recipe says to blanch the asparagus and chop some for the quiche and organize all of several on top, the other said to cook the asparagus in butter and some wheels arranged in a pin on top (still together). Has someone tried both methods of cooking (In butter and blanched) if so, what was your favorite and why? I do this for dinner tonight because I left a ton of asparagus in the refrigerator. Thank you for your answers! The members of the family who would love to eat asparagus quiche. Only one family member does not and he throws almost at the mention of the word asparagus ~ guess it's a good thing he does not live with us! : O) Yeah, I'm not big on vegetables, butter ………. I usually do a bit of extra virgin olive oil or olive oil that I have that has a hint of garlic in it.
I would cut it into small pieces and steam in my steamer. Then it will be nice and soft and work well in a quiche. I do it for a casserole with cheese and rice is great.
