During the autumn months, I can not wait to go to our local orchard and buy some fruits and vegetables. After I returned with me, I like my pot out with the bath water and canning supplies, and some are lots of different butters.
Canning is much easier than it seems and butter-making is ideal for beginners. You can find cookbooks in various market or you can search various online websites for instructions on how to do canning bath.
I like to treat my butter 4 oz size canning (mason) jars, but if you have a larger family, you can certainly use the size 8 ounces. You want to always start with good quality fruits and / or vegetables and use clean, sterilized mason jars that are specifically manufactured for home canning.
Here 3 recipes that my family enjoys.
Apple Butter
16 cups applesauce
1 / 2 cup vinegar
3 pounds granulated sugar
2 tablespoons ground cinnamon
1 / 2 teaspoon ground cloves
In a large bowl, combine all ingredients above well, stirring well. Transfer the mixture into a large baking dish. Place dish in a preheated oven at 300 degrees and bake for 3 hours. Remove the mixture from oven and pour into hot jars, clean and sterilized. Process jars in a pot with water bath for 10 minutes.
Banana Butter
3 bananas cup, about 8 to 10 bananas
1 / 4 cup lemon juice
1 / 4 cup maraschino cherries, finely chopped
6 1 / 2 cups granulated sugar
1 (6 ounce) bottle liquid pectin
Peel and slice bananas into a large bowl. Using a pestle, mash bananas down. Measure 3 cups banana pulp and place in large saucepan. Stir in lemon juice, chopped cherries and granulated sugar. Bring to a boil and boil hard for 1 minute, stirring constantly. Remove from heat and quickly stir in liquid pectin. Ladle into clean hot jars. Process jars in a pot with the bathwater for 10 minutes.
Pumpkin Butter
3 1 / 2 cups fresh pumpkin puree or canned pumpkin puree
2 1 / 2 cups light brown sugar
1 lemon, juice and grated zest
1 tablespoon ground ginger
1 1 / 2 c. tea cinnamon
1 / 4 c. to tea allspice
1 / 2 cup tap water
Tip: If you use fresh pumpkin, mix with brown sugar, lemon juice, ground ginger, cinnamon and allspice in large bowl. Let stand at room temperature 8 hours or overnight.
Transfer to a large pot, add water 1 / 2 cup and bring to boil. Simmer over low heat, stirring often, for 40 to 60 minutes, until desired consistency. (With canned pumpkin, mix ingredients in a large saucepan and bring to a boil and simmer at low altitudes around 20 minutes to thicken.) Pour the mixture into hot jars, leaving 1/2-inch headspace. Pour into Clean, hot jars. Process jars in a pot with water bath for 10 minutes.

Does anyone know if I can substitute whole wheat flour with regular flour?
I try to find healthy recipes for cookies, muffins and breads. I was wondering if I can just take a regular recipe and substitute white flour with whole wheat, sugar with a sugar substitute, and perhaps even the butter with applesauce. we do not want to blow it for the holidays, but I think we all deserve a treat.
With bread substitutes would be OK. In the box of sugar substitute, it should tell you how much sugar substitute to use ex 1 / 2 cup substitute for 1 cup of sugar. Not sure applesauce for butter. But you can always use margarine.
