Place turkey in the brine and add cold water until covered.Now is a good time to add spices such as poultry seasoning or add Italian spices and garlic. Soak 4 hours or overnight, but continue to add ice to keep cold water. Rinse and place in a cooking bag or jar with a little chicken broth (beer or wine is also good) and seasoning.Cook until meat thermometer reads 160 * F wild turkey is much drier than the farm raised so you need a moist cooking method
