A salad is very quick to prepare. Most people have their own ideas of what to put in a salad. Some salads may have seen are not look appetizing. They are simply waiting and boring. This is probably why many people in the western world do not eat enough of these healthy salads. Well, let's do our part to change this situation. Here is a recipe for you which is the opposite. It looks good, tastes good and is really good for you.
We were camping with friends and we decided to have a barbecue. We decided that the meat, but have trouble deciding what must accompany them. My friend told me that when he went to Greece on holiday he really enjoyed their fresh salads. With ingredients that remembered we were to duplicate the recipe. After we had finished preparing the salad it looked really appetizing.
Here is the recipe for you and wish you a good fresh salad Greek style as much as we did.
INGREDIENTS
(serves 4)
4 large tomatoes cut into wedges
1 large cucumber
2 large red peppers
1 red onion
Approximately 16-20 green olives and black-stoned
250g good-firm cheese feta
1 small handful of fresh parsley leaves
About 1 dozen fresh mint leaves
125ml oil extra virgin
2 tablespoons lemon juice
1 clove garlic crushed
METHOD
Take the cucumber, peel, First and cut in half, length ways. Remove seeds and cut into small cubes. Cut red peppers into slices across. Remove any seeds and pith. Slice the onion. Cut the feta cheese into small cubes. Once you've done this, place the tomatoes, cucumbers, red peppers, onions, olives, feta in a large bowl. Add half the parsley and mint leaves. Mix gently together.
Put olive oil, lemon juice and garlic crashed into a container with a lid. Add a little salt and pepper for seasoning. Shake until well blended. Pour dressing over salad. Gently turn over with a large spoon or spatula to evenly cover with salad dressing. Sprinkle the remaining parsley and mint leaves on the salad.
This recipe is a rich source of vitamins and minerals. It is also very good for your heart, especially if you use tomatoes, red peppers, olives and olive oil. Feta cheese is also a good source of vitamins and calcium. The reason being, it is made from goat milk. It has much less fat than milk from cows which again is beneficial for the heart and weight watching. All fresh foods and very nutritious. Enjoy.
