Low Calorie red lentil and vegetable soup. This soup makes a perfect snack when hunger calls because it is very low in calories, and warming winter. You can also add to the soup base recipe, leeks, zucchini, spinach and cabbage to vary the taste. 250g (9oz) red lentils 1 can of chopped tomatoes or 3 fresh tomatoes, skinned and chopped 3 carrots, peeled and chopped 3 stalks celery, washed and chopped 1 large onion, chopped fresh ginger, grated some vegetable stock option or water a pinch of salt freshly ground pepper 1. Add lentils to water cold and bring to a boil, skim the foam 2. cook gently for 15 minutes, set aside 3. in the meantime, boil all the vegetables together for 20 minutes in the broth or water 4. Add the lentils to 5 vegetables. mix all together 6. add water or broth if necessary 7. Season to taste
